Chilli Jam {Day 1 - 12 Days of Christmas at Sprout's House}

Twelve Days of Christmas at Sprout's House

As we were a little busy last year getting married, we didn’t really do much to prepare for Christmas other than wrap presents – we didn’t even get a tree. So this year we are going to make a real effort to get into the Christmas spirit especially as Sprout has become increasingly clued up as to what goes on!

With that in mind, I wanted to share with you a flavour of what will be happening at Sprout’s House throughout the Christmas period. Over the next four weeks, there will be twelve Christmassy posts containing a mixture of recipes, easy to make gifts and DIY decorations which won’t break the bank.

So I hope you’ll join us as we celebrate

Christmas at Sprout’s House.

Day 1 of Twelve Days of Christmas is a jar full of delicious, ruby red stickiness also known as

Sweet Chilli Jam

What you need –
4 red peppers - deseeded
5 red chillies – keep seeds!
2 cm fresh root ginger
4 garlic cloves
400g can cherry tomatoes
325g golden caster sugar
125ml red wine vinegar
2 glass jam jars
Time: 1 hour and 30 minutes
Makes 2 x 430ml jars - recipe easily doubled

Roughly chop red peppers and red chillies, and add to a food processor along with the ginger and garlic cloves. Blitz until finely chopped, and then add to a saucepan with cherry tomatoes, sugar and vinegar.

Bring to the boil and remove any scum that forms on the surface. Turn down to a simmer and leave for about 50 minutes(or as long as it takes - mine took about 70 minutes). Stir every so often.

Once the jam starts to darken in colour and become sticky, cook for another 10-15minutes stirring regularly so it doesn’t burn.

Allow to cool before pouring into sterilised jam jars. Then top with some greaseproof paper to help prevent mould. Store in a dark cupboard and in the fridge once the jam has been opened. It will keep for about 3 months.

I first discovered this recipe a few years ago when I was on maternity leave and looking for cost effective presents. It is particularly delicious with sausages instead of ketchup, and also cold meats. So, scrumptious with any Christmas leftovers that you have!

A jar of this jam is perfect for slipping into a stocking or taking as an alternative gift to a drinks or dinner party. Yum! For more delicious jam recipes have a look at
